POTATO PICKLE

INGREDIENTS :

Potatoes (boiled) - 250 grams (cut into cubes)
Lemon juice - 1 tbsp
Salt to taste

For seasoning
Jembu leaves - a pinch
Fresh coriander (chopped) - 1 tbsp
Green chillies (chopped) - 3
Heeng - 1 pinch
Turmeric - 1 pinch
Mustard oil

METHOD:


  • Mix together potatoes salt and lemon juice. Let it marinate for 3 to 4 hours.

  • In a pan heat oil , add green chillies , turmeric , fresh coriander , heeng and jembu leaves. Fry for a minute.

  • Add the marinated potato cubes. Fry for 2 minutes. Then switch off gas, cover the pan with a lid and let it stand till it cools down.

  • Store in a container and serve it only after 2 to 3 hours.
